Super easy and keeps well are my GF breakfast on the fly cups!
Bacon cut into 2 inch strips
1 dozen eggs
salsa or pico de gallo or even a cherry tomatoes
salt and pepper to taste
Place bacon strips to make a cup in a muffin tin ( I usually use 4 strips to each tin)
Drop one whole egg into each tin
Add salsa
salt and pepper to taste
Bake in a preheated oven of 350 for 25 minutes
Can be refrigerated and eaten cold or re-heat in micro for 30 seconds!
